Sweet Potato & Pear Soup | Noro Okusna Juha iz Sladkega Krompirja

The pears or apples give body and a sweet intriguing taste to this simple & healthy soup! I have been making this yummy soup since my kids were little babies. I hope it brings you and your family as much comfort as it has brought to us over the years! Dober tek!

1 Tbsp butter
1 large onion, chopped
1 garlic, minced
4 cups chicken broth or bouillon
2 sweet potatoes, chopped (or 4 large carrots, chopped)
4 pears or apples, chopped
1/2 tsp salt
1/4 tsp cayenne pepper (*optional)

1. Into a large pot melt the butter. Once melted add the onion until translucent, about 5 minutes. Then add in the minced garlic and fry for a few seconds until fragrant, about 30 seconds.
2. Next add the broth, sweet potatoes, pears (or apples), salt and cayenne pepper.
3. Cover and bring to a boil. Reduce the temperature and simmer for about 30 minutes until vegetables are tender. Purée in a blender or food processor. Taste and add in more salt or pepper. * if you want it to be a little sweeter add in a tsp of sugar.

Makes about 6-8 cups
Cover and refrigerate for up to 2 days or freeze.
