Tenstan Krompir is a traditional Slovenian potato side dish. It pairs perfectly with so many of our culinary dishes. It is also known as Renstan or Pražen krompir. A favourite with everyone in the family!
Ingredients
4 x Yellow flesh potatoes
1 Tbsp lard (oil or butter)
1 x small diced cooking onion
2 Tbsp’s pork crackling (or bacon)
2 Tbsp’s beef broth
salt & pepper to taste
1. Boil 4 yellow flesh potatoes with the skin on. Once cooked, strain and add cold water back to the pot with the potatoes. This helps cool the potatoes down. Strain after a few minutes. Peel the skin only. Set aside
2. In a large frying pan melt 1 Tbsp lard (oil or butter. Once melted add in the diced onions.
3. Once onions are translucent, add in 2 Tbsp’s pork crackling (or bacon). Fry together for about 2-3 minutes, on medium-low temperature, until lightly golden.
4. Add in 2 Tbsp’s broth. Mix with a wooden spatula.
5. Slice potatoes and add them to the frying pan with onions. Sautéed for about 4-5 minutes. Mixing and pushing down with your wooden spoon. Season with salt and pepper to taste.
