25-30 fresh elderflower heads (fully open, not browning)

1.5 kg white granulated sugar

How to Make Elderflower Cordial (Step-by-Step)
Step 1: Sterilize Your Bottles
Clean your bottles thoroughly, then:

Place in an oven at (250°F) for 20 minutes

Keep them warm until use

For plastic caps, pour boiling water over them instead
Step 2: Prepare the Elderflowers

Shake gently to remove insects (do not wash—you want to preserve the pollen)

Snip off thick stems, keeping only the blossoms
Step 3: Make the Syrup

Bring 2 litres of water to a boil, then remove from heat

Stir in the sugar until fully dissolved

Add lemon slices, citric acid, and elderflower heads

Cover and let steep in a cool, dark place for 24–48 hours
Step 4: Strain the Cordial

Heat to 85°C (185°F) without boiling, basically until it JUST reaches the boiling point.
