Jagodna Pita (Slovenian Strawberry Cake Recipe)

Simple, quick, and absolutely delicious — this homemade strawberry cake (Jagodna Pita) is a classic example of traditional Slovenian baking at its best. Perfectly fluffy and bursting with fresh strawberry flavor, it’s an easy dessert that’s sure to be a crowd-pleaser at picnics, potlucks, or any gathering. Get ready to watch it disappear fast!

Ingredients

  • 5 whole eggs (I use large eggs)
  • 1 cup sugar 
  • 1 cup oil (neutral oil)
  • 2 cups of flour 
  • 1 tsp Vanilla (or 1 pkg Dr Oetker Vanilla sugar)
  • 2 tsp’s baking powder (or 1 pkg Dr Oetker baking powder)

Strawberry Mixture:

  • 1 3/4 cups chopped or sliced strawberries 
  • lemon zest from 1/2 of a lemon 
  • 1/4 cup of sugar

1. Mix above ingredients together until no lumps and batter is smooth. 

2. Grease a 9 x 13 non stick pan and then line it with parchment paper.

3. Pour half of the batter in the pan.

4.  In a small bowl add chopped or sliced strawberries. Sprinkle in 1/4 cup of sugar and lemon zest. Mix together.

5.  Add strawberry slices to first layer of batter then top with the rest of the remaining batter.

6.  Bake in a 350 degree oven 35-40 minutes

7. Dust with icing sugar!  Serve. Dober tek!

🔸 Can I use frozen strawberries instead of fresh?

Yes — but frozen berries have more water and can sink during baking. To prevent this, take them out of the freezer just before using and toss them in a little flour before adding them to the batter.

🔸 Can I make this cake ahead of time?

Absolutely. This cake stays moist and delicious for up to 2 days when stored in an airtight container at room temperature. In fact, it often tastes even better the next day!

🔸 How should I store leftovers?

Store any leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 4. Bring to room temperature before serving for the best flavor and texture.

🔸 Can I add other fruits?

Yes! While this recipe is designed for strawberries, you could try raspberries, blueberries, or even thinly sliced peaches. Just make sure they’re not too juicy, or toss them lightly in flour before baking.

🔸 How do I know when the cake is done?

Bake at 350°F (175°C) for 35–40 minutes. The cake is ready when it’s golden on top and a toothpick inserted into the center comes out clean.
