ALMOND MACAROON COOKIES | Mandljevi Makroni


These Slovenian Almond Cookies are an old family recipe. Super easy to make.  They are deliciously soft and chewy on the inside and crunchy on the outside.

Ingredients
• 250g or 2 1/2 cups ground almonds
• 150g icing sugar or 1 1/3 cups
• additional 50g icing sugar or 1/3 cup & 1 Tbsp set aside to mix with the egg whites
• 1 tsp almond extract
• 4 egg whites

1. Preheat oven to 300 degrees.
2. Mix ground almonds, 150g icing sugar with almond extract in a bowl and set aside. 
3. In a separate bowl beat the egg whites, add in the reserved icing sugar (50g or 1 1/3 cups) . Add it slowly to the egg white mixture until it reaches a stiff peak. 
4. Now add in the ground almond mixture to the egg whites, folding them in carefully until well combine.
5. Make the macaroons by using 2 teaspoons and dropping them onto a baking sheet that is lined with parchment paper. You can also us a piping bag.
6. Bake for 20-30 minutes. Keep a close eye, after 20 minutes, as the baking time will depend on the size of your macaroons.
