Pražen Krompir: Slovenian Sautéed Potatoes with Onions & Crackling

Pražen Krompir (Tenstan Krompir) – Traditional Slovenian Sautéed Potatoes 

Ever taste a potato that feels like a hug from your Mama? 🤍 That’s Pražen Krompir, also called Tenstan Krompir, and in some regions, Restan / Renstan Krompir. Golden potato slices, onions sizzling in lard, and a little crunch of pork crackling or bacon… every bite is comfort, tradition, and love on a plate.

This humble yet beloved Slovenian dish has been a part of family tables for generations — the kind of recipe that makes Sunday lunches feel like home, and weekday dinners a little brighter.

Why This Dish Has Three Names (Pražen, Tenstan, Restan / Renstan Krompir)

The three names mostly come from regional dialects rather than different recipes:

  • Pražen Krompir – The most common, standard name. Literally fried potatoes, emphasizing the sautéing technique.
  • Tenstan Krompir – Central Slovenia; “tenstan” is a dialect word meaning sautéed until lightly golden.
  • Restan / Renstan Krompir – Used mainly in Štajerska (Styria) and eastern Slovenia, reflecting local language.

No matter what you call it, the dish is the same comforting sautéed potatoes with onions — golden, tender, and full of flavour.

Ingredients

  • 4 yellow-flesh potatoes (*see substitutions below)
  • 1 Tbsp lard (or oil/butter)
  • 1 small cooking onion, diced
  • 2 Tbsp's pork crackling (or bacon)
  • 2 Tbsp's beef broth
  • Salt & pepper, to taste

*Potato Substitutions:

  • Canada / USA: Yukon Gold or Yellow Finn
  • Australia: Dutch Cream, Kipfler, or Desiree
  • Avoid very starchy potatoes for best sautéing results

Instructions

  1. Boil the potatoes with skin on. Once cooked, drain and pour cold water into the pot to cool briefly. Drain again and peel. Set aside.
  2. Heat lard (or oil/butter) in a large frying pan. Add diced onions and sauté until translucent.
  3. Add pork crackling or bacon and fry 2–3 minutes on medium-low heat until lightly golden.
  4. Pour in beef broth and mix with a wooden spatula.
  5. Slice potatoes and add to the pan. Sauté 4–5 minutes, gently pressing and stirring with a wooden spoon. Season with salt and pepper to taste.
  6. Serve warm. Dober tek!

 

Tips for Perfect Pražen / Tenstan / Restan Krompir

  • Fry gently on medium-low heat to avoid burning the onions.
  • Press lightly with a wooden spoon for slightly crispy edges while keeping the interior tender.
  • Pork cracklings are traditional, but bacon or pancetta are delicious alternatives.
  • Yellow-flesh potatoes are best; if unavailable, use Yukon Gold, Dutch Cream, or Desiree.
