One of my favourites in the pantry. These pickled red peppers are a staple on every Slovenian charcuterie board. They are equally delicious in a sandwich or even on there own as a savoury snack! Dober tek!

INGREDIENTS
3 cups white vinegar
3 cups white vinegar
5 cups water
3/4 cup to 1 cup of oil
2 tablespoons sugar
2 tablespoons salt

DIRECTIONS
1. Boil above ingredients together in a large pot.
2. Clean and quarter red peppers. Once vinegar water begins to boil add quartered red peppers in for only about 2 minutes.
3. After 2 minutes quickly remove peppers and add them to the prepared jars. Fill up the jars with the boiled vinegar pickling water. Use the back handle of a wooden spoon to push down the peppers, this helps to fill up the jars with as much peppers as you can.

4. Place the lid on and close tightly. Flip the jars upside down. Cool and place in cold cellar. *Taste the pickling vinegar water and add more vinegar or salt to taste.
