Instructions: How to Make Slovenian Honey & Chamomile Bundt Cake
Step 1: Prepare the Milk & Honey Mixture
Steep 1 camomile tea bag in 50 ml boiling water for 5 minutes, then remove the tea bag. Add the milk and honey, and gently simmer over low-medium heat for 5 minutes. Remove from heat, allow to cool, then strain through a mesh strainer and stir in the lemon juice. Set aside.
Step 2: Mix Dry Ingredients
In a medium bowl, sift together the flour, baking soda, baking powder, and salt. Add the lemon zest and whisk until well combined. Set aside.
Step 3: Cream Butter & Sugar
In another bowl, cream together the sugar and butter using an electric mixer with a whisk attachment. Beat for 6 minutes until light, fluffy, and creamy.
Step 4: Add Eggs & Vanilla
Add eggs one at a time, mixing after each addition. Finish by adding the vanilla extract.
Step 5: Combine Wet & Dry Ingredients
Slowly fold the flour mixture and the milk mixture into the egg-sugar mixture, alternating between the two until fully combined and smooth.
Step 6: Prepare & Bake the Bundt Cake
Butter and flour your Bundt pan. Pour in the batter, smoothing the top with a spatula. Bake in a preheated 350°F (175°C) oven for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
Step 7: Make the Chamomile-Honey Glaze
While the cake bakes, steep a camomile tea bag in 120 ml boiling water for 5 minutes. Add sugar, honey, and lemon juice, and bring to a boil until the sugar dissolves. Reduce heat and simmer for about 10 minutes until slightly thickened. Remove from heat and allow to cool.
Step 8: Glaze the Cake
Once the cake is cooled in the Bundt pan, poke holes with a wooden skewer. Pour ¾ of the glaze slowly over the cake, letting it seep into the holes. Let the cake rest for another 30 minutes before flipping it onto a serving plate. Brush the remaining glaze over the top and sides.
