Homemade Canned Peaches

 

Canned Peaches are one of my most favourite things to preserve — For me it’s like summer sunshine in a jar that I get to enjoy all year through! Ingredients:
6 Litres of freestone peaches (2 x small baskets)

Syrup:
6 cups of water + 3 cups of sugar

Directions:
🍑 Peel and slice peaches and discard pit.
🍑 Place 6 cups of water & 3 cups of sugar into a pot and bring to a boil over medium to high heat
🍑 Divide peaches between 6 small sterilized canning jars, being sure to leave about 1” of space from top of jar
🍑 Pour hot syrup over peaches, leaving about 1/4” of space from top of jar.
🍑 Gently push down peaches with the opposite end of wooden spoon to get rid of any air pockets. Add more syrup as necessary to each jar. Tightly seal jars with lids that have been simmering in water for at least 10 minutes.
To seal:
🍑 Set oven to 350 degrees. Place jars on a cookie sheet lined with parchment paper into a 350 degree oven.
🍑 At around 30 minutes you should notice bubbles coming up along the top inside of the canning jars this means they are done.
🍑 Turn off the oven and leave the door open to cool the jars down for a few minutes - before removing them from the oven. It makes it much easier & safer to handle them this way.
🍑 Once removed from the oven place the jars upside down onto a board lined with a cloth. Once cooled store them in a dry dark space until ready to eat. Dober Tek!!
