PREKMURSKA GIBANICA • Recipe for a 10 Layer Prekmurje Cake

Prekmurska Gibanica! This is a delicious 10 layer cake, every bite is like an orchestra playing in your mouth. It’s from the region of Prekmurje, where my Mama was born and raised! It’s not as complicated as it may look, so don’t let the layers Intimidate you. This cake has been served for centuries as a festive and ritual dish in Prekmurje. No wedding in Prekmurje is complete without a Gibanica!

*** 𝘐𝘧 𝘺𝘰𝘶 𝘸𝘰𝘶𝘭𝘥 𝘭𝘪𝘬𝘦 𝘵𝘰 𝘱𝘶𝘳𝘤𝘩𝘢𝘴𝘦 𝘵𝘩𝘦 𝐒𝐪𝐮𝐚𝐫𝐞 𝐒𝐩𝐫𝐢𝐧𝐠𝐟𝐨𝐫𝐦 𝐏𝐚𝐧 𝘐 𝘢𝘮 𝘶𝘴𝘪𝘯𝘨 𝘪𝘯 𝘮𝘺 𝘷𝘪𝘥𝘦𝘰 𝘩𝘦𝘳𝘦 𝘪𝘴 𝘵𝘩𝘦 𝘭𝘪𝘯𝘬 𝘵𝘰 𝘸𝘩𝘦𝘳𝘦 𝘺𝘰𝘶 𝘤𝘢𝘯 𝘱𝘶𝘳𝘤𝘩𝘢𝘴𝘦 𝘪𝘵. 𝘠𝘰𝘶'𝘳𝘦 𝘨𝘰𝘪𝘯𝘨 𝘵𝘰 𝘭𝘰𝘷𝘦 𝘵𝘩𝘪𝘴 𝘱𝘢𝘯, 𝘪𝘵 𝘩𝘦𝘭𝘱𝘴 𝘮𝘢𝘬𝘪𝘯𝘨 𝘵𝘩𝘪𝘴 𝘥𝘦𝘴𝘴𝘦𝘳𝘵 𝘴𝘰 𝘦𝘢𝘴𝘺

Recipe Below 
Shortcrust Pastry Dough:
‣ 200g Flour
‣ 100g butter 
‣ 1 large egg
‣ 1 Tablespoon Sugar
‣ 1/4 tsp salt 
‣ 2 tsp’s baking powder 
‣ 1 package vanilla sugar 


1. Combine above Ingredients in a bowl. Mix dough with spatula or your hands. Add a little bit of flour if the dough is too sticky
2. Prepare a 9 x 9 springform baking pan.
*order 𝐒𝐪𝐮𝐚𝐫𝐞 𝐒𝐩𝐫𝐢𝐧𝐠𝐟𝐨𝐫𝐦 𝐏𝐚𝐧 here ➤
3. Butter bottom of the baking pan
4. Roll out the shortcrust pastry Dough between 2 sheets of clear plastic wrap then place In baking pan. Pierce the pastry dough with a fork all over. Set aside

Poppyseed Filling:
‣ 300g  poppyseeds (ground) 
‣ 3 Tbsp’s sugar
‣ Zest from 1/2 a lemon 
*mix above ingredients and set it aside

Cottage Cheese Filling:
‣ 500g (dry) pressed cottage cheese 
‣ 1/4 cup sour cream
‣ 4 Tbsp’s sugar 
‣ 1 package vanilla sugar 
*mix above ingredients and set it aside

Walnut Filling:
‣ 300g ground walnuts 
‣ 3 Tbsp’s sugar 
‣ 1 Tbsp Rum
‣ 1 package vanilla sugar 
*mix above ingredients and set it aside

Apple Filling:
‣ 3 x peeled & grated green apples 
*squeeze and strain juice from grated apples
‣ 1 tsp cinnamon 
‣ 1 Tbsp lemon zest
‣ 1 Tbsp lemon juice 
‣ 1 package of vanilla sugar 
‣ 3 Tbsp’s sugar 
* optional: add 1/4 cup raisins that have been soaked in rum 
*Mix above Ingredients and set aside

Cream Sauce:
‣ 200g Sour cream 
‣ 2 Tbsp’s icing sugar 
‣ 2 x large eggs 
*mix and set aside

‣ 1/4 cup of melted butter 

‣ 454g box of store bought phyllo dough 

5. Place a sheet of phyllo Dough over the pierced pastry dough
6. Brush the pastry dough with melted butter
7. Spread 1/2 of the poppyseed filling ontop of buttered phyllo dough
8. Drizzle on 2 Tbsp’s of cream sauce
9. Drizzle a little bit of melted butter
10. Place a sheet of phyllo Dough over top, pierce the phyllo Dough
11. Spread on 1/2 of the cottage cheese filling, drizzle on 2 Tbsp’s of cream sauce and 1 Tbsp of melted butter
12. Place a phyllo sheet over top and pierce the dough
13. Add 1/2 of the walnut filling, 2Tbsp’s cream sauce and 1 Tbsp melted butter
14. Add on another layer of pastry dough, then pierce the dough
15. Add on 1/2 of the grated apples, we DO NOT add on the cream sauce to this layer, we will only be drizzling on the melted butter
16. We will continue to layer again, using the other half of the fillings. Starting with poppyseed, cottage cheese, walnut and finishing it off with the apple filling
17. Add 2 layers of phyllo dough over the apple filling layer, brushing on melted butter between the layers.
18. Trim the sides, removing any phyllo dough that Is hanging over the baking pan.
19. Brush on melted butter again on the top sheet of phyllo dough, and spoon on a few Tablespoons of the cream sauce
20. Bake in a 350 degree oven for 1 hour.
