Tenstan Krompir | Sautéed Potatoes with Onions (Slovenian Recipe)

Tenstan Krompir is a traditional Slovenian potato side dish  It pairs perfectly with so many of  our culinary dishes. It is rather easy to put together. A favourite with everyone in the family!


4 x Yellow flesh potatoes 

1 Tbsp lard  (oil or butter)

1 x small diced cooking onion 

2 Tbsp’s pork crackling (or bacon) 

2 Tbsp’s broth 

salt & pepper to taste 

1. Boil 4 yellow flesh potatoes with skin on. Once cooked, strain and add cold water to out with the potatoes to help cool them for a few minutes. Peel skin only. Set aside
2. In a large frying pan melt 1 Tbsp lard (oil or butter. Once melted ado in diced  onions. 
3. Once onions are translucent add in 2 Tbsp’s of pork crackling (or bacon). Fry together for about 2-3 minutes on medium-low temperature until lightly golden in colour.
4. Add in 2 Tbsp’s broth. Mix with with a wooden spatula.
5. Slice potatoes and add to frying pan with onions. Sautéed for about 4-5 minutes. Mixing and pushing down with your wooden spoon. Season with salt and pepper to taste.
