Slovenian Apple Cherry Cake (Češnjeva-jabolčna torta)

Some of my favourite recipes are the simplest ones.

The ones that don’t need fancy ingredients or complicated steps — just fresh fruit, a few pantry staples, and the feeling of home. This Apple-Cherry Cake is one of those recipes.

Growing up in a home with strong Slovenian roots, food was always much more than what sat on the table. It was family gathered together, coffee shared after meals, stories being told, and recipes quietly passed from one generation to another.

This cake brings together sweet apples and juicy cherries in a light homemade batter that feels simple, comforting, and perfect for the warmer months.

Ingredients

• 3 eggs
• 6 Tbsp sugar
• 6 Tbsp sifted flour
• 1 package vanilla sugar
• 1 tsp sifted baking powder
• 1/4 cup vegetable oil
• 1/2 sweet apple, sliced
• Handful of cherries, halved and pitted
• Sugar for dipping apples


How To Make Slovenian Apple-Cherry Cake

Step 1:

Whisk eggs and sugar until light and fluffy.

Step 2:

Add oil, vanilla sugar, baking powder, and sifted flour. Mix until smooth.

Step 3:

Peel and core apple and slice into approximately 1/2 cm slices.

Step 4:

Pit and halve cherries.

Step 5:

Lightly dip apple slices into sugar.

Step 6:

Grease an 8x8 glass baking dish.

Step 7:

Arrange apple slices on the bottom of the dish.

Step 8:

Pour batter over apples and spread evenly.

Step 9:

Add cherries on top.

Step 10:

Bake at 350°F (175°C) for approximately 30 minutes.
