Ingredients

For the cookies:

  • 3 large egg yolks

  • 120g granulated sugar (about 1/2 cup + 1 Tbsp)

  • 1 package vanilla sugar

  • Zest from 1 lemon

  • 200g ground almonds (about 2 cups)

For the glaze:

  • 3/4 cup icing sugar

  • 2 Tbsp lemon juice


Directions

  1. Preheat the oven to 350°F (180°C). Separate the egg yolks and set aside.

  2. In a bowl, beat the egg yolks, granulated sugar, and vanilla sugar until thick and pale yellow.

  3. Add the lemon zest and ground almonds. Mix until combined.

    The dough will be crumbly — place it on your work surface and form into a ball, then flatten into a disk.

  4. Dust your work surface with icing sugar. Roll out the dough to about 1/2” thickness.

  5. Use your favourite cookie cutters to cut the dough into shapes.

  6. Place cookies on a parchment-lined baking sheet.

  7. Bake for about 8 minutes, or until the edges are lightly golden.

    Do not over bake — the cookies should remain tender.

  8. Allow cookies to cool slightly, then brush or dip with the lemon glaze. Enjoy!
