
Pražen Krompir (Tenstan Krompir) – Traditional Slovenian Sautéed Potatoes

Why This Dish Has Three Names (Pražen, Tenstan, Restan / Renstan Krompir)
The three names mostly come from regional dialects rather than different recipes:
- Pražen Krompir – The most common, standard name. Literally fried potatoes, emphasizing the sautéing technique.
- Tenstan Krompir – Central Slovenia; “tenstan” is a dialect word meaning sautéed until lightly golden.
- Restan / Renstan Krompir – Used mainly in Štajerska (Styria) and eastern Slovenia, reflecting local language.
No matter what you call it, the dish is the same comforting sautéed potatoes with onions — golden, tender, and full of flavour.
Ingredients
- 4 yellow-flesh potatoes (*see substitutions below)
- 1 Tbsp lard (or oil/butter)
- 1 small cooking onion, diced
- 2 Tbsp's pork crackling (or bacon)
- 2 Tbsp's beef broth
- Salt & pepper, to taste
*Potato Substitutions:
- Canada / USA: Yukon Gold or Yellow Finn
- Australia: Dutch Cream, Kipfler, or Desiree
- Avoid very starchy potatoes for best sautéing results
Instructions
- Boil the potatoes with skin on. Once cooked, drain and pour cold water into the pot to cool briefly. Drain again and peel. Set aside.
- Heat lard (or oil/butter) in a large frying pan. Add diced onions and sauté until translucent.
- Add pork crackling or bacon and fry 2–3 minutes on medium-low heat until lightly golden.
- Pour in beef broth and mix with a wooden spatula.
- Slice potatoes and add to the pan. Sauté 4–5 minutes, gently pressing and stirring with a wooden spoon. Season with salt and pepper to taste.
- Serve warm. Dober tek!

- Fry gently on medium-low heat to avoid burning the onions.
- Press lightly with a wooden spoon for slightly crispy edges while keeping the interior tender.
- Pork cracklings are traditional, but bacon or pancetta are delicious alternatives.
- Yellow-flesh potatoes are best; if unavailable, use Yukon Gold, Dutch Cream, or Desiree.
