Easy Veal Paprikash | Telečji Paprikaš

 

Slovenian cuisine has a lot of influence from all of our wonderful neighbouring countries. This 'Paprikash' recipe takes us to the Eastern side of Slovenia. Veal is one of my most favourite meats to use when making paprikaš, it can also be substituted for chicken.

This meal is so perfect for a weeknight or weekend lunch or dinner.

Ingredients:
2 pounds of stewing veal
2 x medium onions (chopped)
4-5 cloves of garlic (minced)
1 yellow & 1 red pepper (diced)
4 Tablespoon’s paprika
2 x bay leaves
1 x tomato chopped
1 cup of beef broth (more or less depending on desired consistency)
Seasoning: salt, pepper
Olive oil for frying
4 Tbsp’s sour cream (optional)

Optional:
*1 cup beef broth + 1 Tbsp flour = to thicken paprikash sauce

Directions:
1. Cut stewing veal chunks to small pieces
2. Add veal to a deep pot with olive oil fry meat until slightly browned than remove and set aside
3. Add olive oil to same pot and add diced onions. Fry until nice Golden colour
4. Add meat chunks back into pot with onions
5. Fry for about 4-5 minutes together than add garlic...fry until nice aroma about 2 minutes
6. Add peppers and diced tomato
7. Add about 1 cup of beef broth to bottom of pan to cover the bottom to desired consistency.
8. Add 2 bay leaves
9. Add 4 Tablespoons of paprika
10. Stir, set temperature on low setting. Cover and let simmer for 30 minutes.
11. After 30 minutes remove the bay leaves, add preferred seasoning, I use salt, pepper & vegeta to taste
12. Cover and Continue to simmer on low for another 30 minutes
13. To thicken the sauce: in a little bowl add 1 Tablespoon of flour and about 1 cup of cool or room temperature beef broth (or water). Whisk together until no lumps *do not use hot liquid with flour otherwise the flour will clump in the liquid.
14. Add flour + beef broth mixture into the paprikash stirring constantly until you reach your desired consistency
15. * Optional add 4 Tbsp sour cream

Serve veal paprikash on it's own or over mashed potatoes, dumplings, gnocchi, pasta, polenta or rice!! Dober Tek!!
