Easy Snowball Cookies | Forgotten Meringue Kisses Recipe

These Easy Snowball Cookies, also known as forgotten cookies or meringue kisses, are a holiday favourite and incredibly simple to make! With just a few ingredients you likely already have, these cookies are crisp on the outside, soft on the inside, and melt in your mouth. Perfect for gifting, holiday parties, or cozy winter treats.

Ingredients

  • 2 egg whites

  • 3/4 cup sugar

  • 1 cup Rice Krispies cereal

  • 1 cup semi-sweet chocolate chips (or 1/2 cup chocolate + 1/2 cup butterscotch chips)


Instructions

  1. Preheat oven to 350°F (175°C).

  2. Separate egg whites from yolks.

  3. Beat egg whites until frothy, then gradually add sugar until stiff peaks form. (Do not overbeat.)

  4. Fold in Rice Krispies and chocolate chips.

  5. Drop teaspoonfuls onto an ungreased baking sheet, about 2” apart.

  6. Turn off the oven! Place the cookies inside and leave for 6 hours or overnight — that’s why they’re called “forgotten cookies.”


Tips & Notes

  • Try half chocolate chips and half butterscotch for variety.

  • Store in an airtight container for up to a week.

  • Perfect for holiday cookie trays or cozy winter afternoons.
