Peach Preserve Cake | Breskova Pita (Slovenian Recipe)


This Peach Preserve Cake is a delicious light dessert. It is a really simple recipe with basic ingredients that you likely already have on hand! Canned peaches are a sweet reminder of summer sunshine. This cake will fill your kitchen and home with such an intoxicating smell!

RECIPE
3 x Eggs
1/2 cup sugar
1 package vanilla sugar or 1 tsp vanilla extract
1/2 cup milk
1/4 tsp salt
1/2 cup of oil
2 cups flour
1 package Dr Oetker baking powder or 2 1/2 tsp’s baking powder

*about 2 cups of peach preserves, sliced

1. Butter a 9 x 13" baking dish. Line the bottom with parchment paper. Set aside. Preheat oven to 325F degrees.

2. Slice homemade peaches. Set aside.

3. In a large mixing bowl start by whisking; eggs, sugar & vanilla together. Next add the milk, oil and salt. Mix until well combined. Last we add the flour and baking powder. Mix until all well combined and there are no lumps!

4. Pour batter into the prepared baking pan. Add the sliced peaches on-top. Bake for 40-45 minutes or until a wooden pick inserted into the center comes out clean.  Let cake cool for at least 30 minutes before serving. Cake can be covered and stored at room temperature for up to 3 days.
