EASY CARROT CAKE - Bakery Quality Recipe


This is the best and easiest bakery-quality recipe for a deliciously moist carrot cake. It's so versatile it can be used to make a cake in a 9 x 13" pan, 24 cupcakes or a 3-layered 9" cake! Perfect to celebrate any occasion. Dober tek!

EASY CARROT CAKE RECIPE
Ingredients
• 4 eggs, room temperature 
• 1 1/4 cups canola oil, vegetable oil or any unflavoured oil 
• 1 cup granulated sugar 
• 1 cup packed brown sugar 
• 2 tsp’s vanilla extract
• 2 cups all purpose flour, sifted 
• 2 tsp’s baking soda 
• 1/2 tsp salt 
• 2 tsp’s cinnamon 
• 3 cups carrots, grated 

DIRECTIONS 

1. Using a large bowl beat the eggs with a hand or stand up mixer, about 1 minute. Add in the oil, white and brown sugar, and vanilla sugar. Mix until combined.
2. Add in the dry ingredients, sifted flour, salt, baking soda, ground cinnamon. Mix until all well combined about 2 minutes. Stopping half way to week down sides and bottom of the bowl. 
3. Fold in the grated carrots. 
4. Preheat oven 350 degrees F (or 175 C)
5. Grease a 9 x 13-inch dish, no less or it will overflow the pan during baking. 
6. Pour the batter into the dish/baking pan spreading batter evenly. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Start checking on it around 35 minutes as every stove and pan is different. 
7. Allow cake to cool before frosting. Use my cream cheese frosting recipe below! 

CREAM CHEESE RECIPE

( * makes 3 cups)
8 ounces cream cheese, softened 
1/2 cup unsalted butter, softened 
1 tsp vanilla
3 - 3 1/2 cups icing sugar, sifted 
In a large mixing bowl beat the cream cheese, butter and vanilla on medium speed until nice and fluffy. Gradually add in the sifted icing sugar, beating on medium speed until light and creamy. *Add in as much or as little icing sugar. It all depends if you want the icing to be a little more stiff or not. 

NOTES

Cupcakes: To make cupcakes just adjust the baking time to around 20-25 minutes. Makes 24 cupcakes
Layered cake: Divide the batter among three  8-9” round cake pans and bake according to pan instructions. Then spread above cream cheese frosting between each layer and on top.
