Experience the Authentic Taste of Slovenian Homemade Soup Noodles
Growing up in a Slovenian home for me meant Sunday soup (juha) with Mami’s homemade soup noodles (Domači Rezanci).
Store bought noodles work BUT homemade is homemade! Am I right? There is just something so special, different, with the way they taste - perhaps it's all the love that our Mom’s and Grandmother's put in to making them by hand, that gave it the comfort and feeling of 'home'. I loved helping my Mami make rezance. Ever since I was a little girl, in my cute little Slovenian made apron. I am so excited to share this recipe with you.

RECIPE
2 cups All purpose flour
3 large eggs
2 Tbsp’s water
1. In a large bowl we add the flour. Set aside.
2. In a small bowl we will crack 3 large eggs. Add in the 2 Tablespoons of water and using a fork whisk until a gentle foam forms. Add this egg mixture to the flour. Slowly mix all together, until you get a crumbly mixture.
3. Using your hands knead the dough on a floured surface until it comes together, the dough will be firm but there should be no dry pieces. Add a little water or flour if needed.
4. Using a rolling pin flatten the dough to a round disc shape. It should be about 6 inches in diameter and about 1 inch thick.
5. Cut the dough into 1” strips and cut them into 2” inch pieces in length. Sprinkle a little bit of flour all over the pieces. This is to ensure that they don’t get stuck in the machine. Use you knuckles and palms to flatten the dough before we run it through the machine.
6. Our machine has 7 different levels of thickness. Start with the largest opening first. Which should be clicked into the “1” position. Continue putting all of the pieces through the rollers one by one.
7. Now we pass them through the machine again. Only this time the setting should be set to level “5”.
8. We will run them through the machine for the 3rd and final time, which will be your narrowest setting and ours is ‘7’.
9. The dough should look like a long smooth thin stocking. Cut the long flattened dough to the size of which you would like your noodles to be in the soup * we cut ours to be around 9” in length before we run them through the narrowest noodle cutters on the machine.
10. Catch the noodles as they come out of the machine, and allow them to dry on a floured surface. Do not rush or skip this step because we want the surface moisture to be completely dry. This will allow you to store the noodles safely for at least 3 months without them deteriorating.
11. Once they are completely dry they will be ready to be cooked in your homemade soup broth. It will take them less than 1 minutes to cook. Keep checking them after 30 seconds. Enjoy! Dober tek!
