Homemade Pork Crackling | Domači Ocvirki

'Ocvírki’ — A type of dish made from pork fat. Pieces of pork
fat that are cut up and cooked in a metal roasting pan. After
they’re done cooking, the fat is drained, and the small pieces
of fat are dried.

***'Ocvirki’ can be added to enhance many Slovenian dishes or served cold as a snack.

Recipe:
Cut pig fat (lard) into small pieces approx. 1 cm thick.
Place pieces into a large deep metal roasting pan. Bake in a 350 degree oven, stirring often. You will know when the ‘ocvirki’ (crackling) are done cooking, when they get a nice golden brown colour.
There will be a lot of liquid fat accumulated in the pot as well. Once you remove the roasting pan from the oven, allow the crackling and liquid fat to cool slightly — The liquid needs to cool to a temperature where it is safe to drain the liquid fat into containers.
save to use for your cooking needs. The crackling can be added and used in many Slovenian dishes. As well as, enjoyed on a piece of toast bread with onions and sprinkled sea salt. *Rub some fresh garlic over the toast before adding on the crackling — so good. 
The crackling can also be ground: you can add a little salt, garlic and then store in jars in the cold cellar or freezer.

*** You can use the (cooled liquid) pork fat as a spread or as a substitute for cooking various Slovenian dishes instead of using oil or butter.
