This Traditional Linzer Cookie Recipe originates from the charming city of Linz, Austria. These classic cookies are made with flour, ground almonds, butter, sugar, spices, and lemon zest, baked to perfection, and filled with your favourite jam — traditionally blackcurrant or raspberry, though my personal favourite is rosehip preserves.
With their delicate texture and that iconic peekaboo cutout window, Linzer cookies are a festive showstopper and a guaranteed holiday favourite for your family to enjoy year after year.

Ingredients

1 cup ground almonds
-
2 cups all-purpose flour
-
1/2 tsp cinnamon
-
1/4 tsp salt
-
1 cup unsalted butter (room temperature)

2/3 cup white sugar
-
1 tsp vanilla sugar
-
2 large egg yolks
-
Zest of 1 small lemon
For the filling:

1/4 tsp jam per cookie (blackcurrant, raspberry, or rosehip preserves)
Directions

Preheat your oven to 350°F (175°C).

In a bowl, sift and whisk together flour, salt, and cinnamon.

Using a paddle attachment on an electric mixer, cream butter and sugar together until light and fluffy (about 3 minutes).

Beat in vanilla sugar, egg yolks, and lemon zest.

Stir in the ground almonds.

Gradually add the flour, salt, and cinnamon mixture.

Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 1 hour or overnight.

Roll out the dough on a lightly floured surface or between 2 sheets of plastic wrap to 1/4-inch thickness.

Cut out cookies using 2–3” cookie cutters, making cutouts in half of the cookies for the peekaboo window.

Place cookies on a parchment-lined baking sheet and bake for 12–14 minutes, until lightly golden.

Let cookies rest a few minutes on the baking sheet before transferring to a cooling rack. Optionally, sprinkle sugar on top and gently rub to coat.

Assemble the cookies by spreading 1/4 teaspoon of jam on the bottom cookie and topping with the cutout cookie.
Yield: ~30 cookies (2” each)
Storage: Store unassembled cookies in an airtight container for several days. Assemble the day you plan to serve them for best results.
