When nature blesses us with a rich harvest of local 'freestone' peaches, we can treat ourselves to a homemade peach juice made in our very own kitchen and then store it away in our cold cellar to enjoy during the chilly winter months! I received this recipe from my friend Renata in Slovenia! I look forward to enjoying her delicious homemade fruit juices when I visit every summer! This delicious peach juice (gosti breskov sok) is like sipping on sweet memories of my childhood!
INGREDIENTS
1.5kg peeled and chopped 'freestone' peaches
2.5L water
450g to 500g granulated white sugar (about 2 to 2 1/2 cups)
10g (2 tsp's ) citric acid
sterilized bottles/jars with lids
DIRECTIONS
1. Add the peeled and cut up peaches to a large pot. Add in only half a litre of water. Bring to a boil, turn down to a medium heat, and then cook on a very low rolling boil for 15 minutes. After 15 minutes check to see if the peaches are nice and soft, if not, continue until they are nice and soft. Remove from the stove and use a hand mixer to blend the peaches until you get a nice smooth consistency.
2. Add in sugar, citric acid and the remaining 2 litres of water. Give it all a good stir. Place the pot back onto the stove. Bring it to a boil and only cook for another 3 to 4 minutes. Skim and remove the foam from the top.
3. Quickly remove from heat and pour into sterilized bottles or jars. Seal tightly with lids. Place the jars onto a board and wrap them completely with a large thick towel or blanket to help them cool down slowly. After letting them cool to room temperature (about 24 hours) store in a cold cellar. Na zdravje!
