Michelle’s Homemade Tomato Sauce (Sugo)

Anyone that knows me well, knows my true love affair for Italian food — plus, my husband is part Italian and many of my closest friends are too. Needless to say, I love Italian food, wine and the people! 🥰 I feel Italian cuisine is similar to Slovenian cuisine. It basically all comes down to fresh ingredients, taste, flavour, affordability and simplicity!
I feel that everyone should have a delicious homemade tomato sauce in their recipe collection. It is just a perfect foundation for so many amazing dishes. I love making a large batch of it because it is so versatile.
The key to my basic tomato sauce is using San Marzano Tomatoes DOP. San Marzano tomatoes are so delicious they are grown in volcanic soil, they’re sweet, they have a low seed count and have low acidity — this one is important in our house because my husband suffers with acid reflux.
My basic tomato sauce recipe requires only a few simple ingredients: olive oil, canned San Marzano whole plum tomatoes, onions & garlic — It’s a keeper! You can thank me later…


Ingredients
❥ 28oz can of San Marzano whole plum tomatoes
❥ 1/2 cup olive oil
❥ 1 tsp tomato paste
❥ 1/2 yellow onion, chopped
❥ 3 garlic cloves
❥ 5-6 Fresh basil leaves
❥ salt & pepper to taste

1. In a large pot add olive oil, and fry onions for about 2 minutes on medium heat. Then add garlic and fry just until fragrant about another 30 seconds.
2. In a large bowl, add the canned tomatoes and crush by hand. Than add to the large pot with the onions and garlic. Add salt, pepper and fresh basil leaves.
3. Mix well and bring sauce to a boil, immediately lower heat to a low simmer. Cook for 1 to 1 1/2 hours.
