Chocolate Crinkle Cookies • Čokoladni razpokančki — These cookies are rich and decadent. They taste like fudgy brownies on the inside with a crunchy powdered sugary edge on the outside, just like a chocolate cookie! Yum!

 

*Makes about 20 cookies

• 1/2 cup unsweetened cocoa powder
• 1 cup granulated sugar
• 1/4 cup oil
• 2 eggs, large
• 1 tsp vanilla extract
• 1 cup all purpose flour
• 1 tsp baking powder
• 1/4 tsp salt
• 1/2 cup powdered icing sugar

1. In a large bowl mix together: cocoa powder, sugar, oil, vanilla and eggs. Keep whisking until well combined and smooth.
2. In a separate bowl sift flour, baking powder and salt.
3. Add the flour mixture into the cocoa mixture. Stir until well combined.
4. Cover the dough with plastic wrap. Place I to the fridge for at least 3 hours or overnight night.
5. Preheat oven to 350F. Using a mini ice cream scoop, scoop the dough and roll into balls (with wet hands). Generously roll in a bowl filled with the powdered sugar.
6. Place the cookies onto a baking tray. Leave enough space between the cookies as they will expand while baking.
7. Bake for 10-12 minutes. The cookies will come out of the oven soft but will harden as they cool. Leave them on the baking tray until they cool down slightly before you place them onto a cooling rack to cool down completely.
